Apam Belanda

I got this apam recipe from the net. The apam was tasty and the family luved it. I used the bahulu mould to make the apam , you can use any similar moulds or muffin pans to make it.



250ml evaporated milk
150gm plain flour
50gm corn flour
1 tsp dry yeast
2 eggs
40gm sugar
60gm butter
A pinch of salt


Filling:
Chocolate chips/any flavour jams /kaya


Method:
Combine milk ,salt and yeast.Stir until yeast dissolve. In a bowl, combine all the dry ingredients . Make a hole in the center , add in the milk slowly followed by beaten eggs.Slowly stir the mixture until there is no lump. Rest the mixture for 1 hour.
Before baking stir in melted butter until well combined.
Preheat oven at 180C .
Use any type of mould that you like.I used a bahulu mould ,but you can also use small muffin pans.
Grease the moulds with butter and heat it in the oven for about 10 mins. Take out the moulds. Add a tbsp of mixture and center it with some kaya or jam filling,and then top up with the rest of the mixture.Do not fill in full because the apam will rise up.
Bake for 16-20mins or insert a toothpick in the center.If it comes out clean then the apam is done. Immediately take out the apam from the moulds, grease again with butter before filling in the mixture again. Stir the mixture each time before filling in the moulds. The time for the apams to bake varies according to the size of moulds being used.

When RV announce this month's Food for 7 stages of Life theme Tiffin , one question pop out on my mind , does guys actually bring lunch box?
The need to carry a tiffin have lost its charm here for Malaysians for years among adults esp men. More famous among school goers , a mum always find ways to give different type of food in a Tupperware for them then for the husband!!Why? The husband’s reason would be troublesome , or they have friends that follow them when they go out for lunch that there is no need for a lunch box!!Yet ,there are many woman who brings food from home to eat during lunch break in their office.
When it comes for Malaysian adults, healthy burgers, any type/flavour of fried rice and noodle stir fries will be the best preference for them . Yet , we must not forget the famous bread .You can just create almost any thing from it, sandwiched with many wonders of fillings .
I suppose its always a headache thinking what to prepare to place in a lunch box.Why not check out the links below for a change of food style preparation.
