Pineapple Prawn Delight



Ingredients
10 large prawns
1 cup medium thick coconut milk
Salt and sugar to taste
1 tsp turmeric powder
200-300gms Pineapples (You can use canned pineapples or fresh ones.Cut into small pieces)


To grind to a paste

8 large shallots(if small ones use 10)
2 nips garlic
5 dried chillies ( soak in water for 15mins and drain)
5 fresh red chillies
2 cm ginger
2 cm galangal
2cm fresh turmeric
3 candlenuts
2 lemon grass (take the white part only or bottom part)
1cm shrimp paste (belacan)


Clean the prawns. Discard the head part. Leave the shell intact . Cut the middle part to remove the digestive track of the prawns.Dry the prawns in a paper towel. Rub some salt and turmeric powder to the prawns.Deep fry half way and toss out.

In a wok, add in 5tbsp of oil, sauté the pounded ingredients until fragrant . Add in coconut milk and let it to simmer for 5mins in medium heat. Add in the prawns and pineapples and leave to cook in low fire. Stir occasionally and once the oil starts to float on top, the dish is ready.
