Spinach Kofta Curry

How many time do we have to force our kids to eat spinach.I can remember numerous time scolding my daughter for leaving the spinach dish on her plate until the end of her meal.My son ,will only tell me one thing ….not only for spinach but any type of leafy greens “yuk”. He will start with the attempt of choking , coughing and making a scene when it comes not only for spinach but any type of vegetables for the matter. We, as mums will of course want our kids to eat leafy greens. And for this purpose try to get some recipe ideas to make the spinach dish as tasty as possible. And this is where the kofta curry seem really the solution to me.They wudnt know that there is spinach in it !!!! LOL.Unless of course you tell them.

According to Wikipedia, Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. Recently, opioid peptides called rubiscolins have also been found in spinach. It is a source of folic acid (Vitamin B9), and this vitamin was first purified from spinach. To benefit from the folate in spinach, it is better to steam it than to boil it. Boiling spinach for four minutes can halve the level of folate.

Fresh spinach loses much of its nutritional value with storage of more than a few days. While refrigeration slows this effect to about eight days, spinach will lose most of its folate and carotenoid content, so for longer storage it is frozen, cooked and frozen, or canned.

100gm finely chopped spinach leaves
1 tsp sugar
5 cups coconut milk or fresh milk
2 tbsp finely cut ginger strips
3 cloves garlic,minced
1 medium onion,finely chopped
2 tsp chilli powder
2 tsp coriander powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp garam masala
1 ½ tsp salt

Spinach Balls(Kofta)
350gm potatoes,boiled and mashed
2 slice white bread, soak in water and squeezed
2 medium onions,finely chopped
2 green chillies,finely minced
2 tsbp chopped coriander leaves
1 tsp garam masala
2 tsp chana flour or more if mixture is not firm
100gm chopped spinach leaves

To prepare spinach balls/kofta

Combine all the ingredients in a bowl.

Shape them into round balls. If dough sticky you can add more chana flour.

Deep fried kofta balls in hot oil until golden brown.Drain on paper towels.

For the gravy
Heat 1 tbsp ghee, stir fry spinach with sugar until becomes soft.Allow to cool.

Combine the cooked spinach and the coconut milk(about 2 cups) in a blender and blend until smooth.

From top: Chilli powder, turmeric powder, garam masala n blended coconut milk with spinach
Center: Coriander powder

Heat 2 tbsp ghee, and stir fry the ginger, garlic and onions.Add all the powders, salt and blended spinach.
Pour in the rest of the milk .Bring to a boil and let it simmer.Add salt to taste.Let the gravy thicken slightly.Close fire.

Just before serving , add the fried spinach balls. The spinach balls that immerse longer in the gravy tends to obsorb the gravy itself. Therefore add required spinach balls only. You can add more later on.
