Kiwi (Actinidia deliciosa) is more properly called Kiwifruit to distinguish it from the New Zealand bird, but most people simply call it Kiwi. It is also known as the Chinese Gooseberry. That name reflects its botanical origins, as its seeds were collected in 1904 by Isabel Fraser in the upper regions of the Yangtze River in southern China. Fraser was on vacation from teaching school in New Zealand, and returned home with the Kiwi seeds which propagated, and gave birth to an entire industry. Until very recently all commercially produced Kiwi came from vines grown from that original stock of seeds.
The familiar green variety, whose name is "Hayward," was developed in 1924 in New Zealand. In 1940 commercial growing and marketing of the fruit began. In the 1970's they began to be grown in California and are now commonly available in the United States. Currently, Italy is the largest producer of Kiwi in the world, followed by New Zealand, Chile, France, Greece, the United States, Portugal and Spain.
Kiwi is now easily available in most supermarkets, may it be the green or golden kiwi. I was able to taste for the first time the golden kiwi,and it was a wonderful experience.The golden kiwi was more sweetter compare to the green ones.Being one of my favourite fruit , kiwi is really a thirst-quinching fruit that one can enjoy on a hot day.
The Golden Kiwi was developed in New Zealand in 1992. The flesh of this fruit has an amazing tropical aroma with a light touch of lemon. Incredibly juicy, sweet and almost without sour, the flesh of golden kiwi can be scooped out with a spoon. You can add this sun-kissed flesh in salads, desserts, drinks or combine it with green kiwi to create a feast of taste and color. Golden kiwi will give you minutes of great pleasure but its ultimate value is presented by the exclusive mix of vitamins and minerals.
Golden kiwi is justifiably referred to as super fruit as it is among leading items on a 20 list of the healthiest fruits on the planet. Kiwi is a great source of vitamins C and E, potassium and dietary fiber. Calorie content of golden kiwi is just 100 kcal. Kiwi burns fats effectively, improves digestion and promotes weight loss. If you want to lose weight, eat 2-3 kiwis every morning before breakfast during at least one month.
Recent studies into the health benefits of golden kiwi show that kiwi plays a role in prevention of cancer, atherosclerosis and protects from age-related deterioration of yellow spot in the eye. Green and yellow kiwis are great to maintain robust health. Skin care masks of kiwi flesh and olive oil are very healthy, too. They give your skin a smooth and shiny look.
Sweet Shortcrust Pastry
225gm plain flour
25g cocoa powder
125g unsalted cold butter,chopped
80g icing sugar
2 egg yolks
1 tsp vanilla essence
2 -3 tbsp cold water
Cheese Filling:
250g cream cheese(room temperature)
4 tbsp icing sugar
1 tsp grated lemon rind
1 tsp lemon juice
Kiwi Filling:
2 golden kiwi
1 tbsp icing sugar
Dash of yellow colouring (optional)
1 ½ tsp corn flour mix with 1 tbsp water
For the crust:
Sift the flour and cocoa powder into a large bowl and add in the butter.Rinse your hand with ice water and wipe dry. Using your fingertips ,rub the butter into the flour until fine and crumbly.Stir in the sugar.Add in the combined egg yolks and vanilla essence.Add in 2 tbsp of ice cold water and mix with the dough.Cut with a knife to form a dough..Gather together to form a smooth dough. Add another tbsp of ice cold water if the dough could not be held together.
Roll out the pastry and cut into round using a 6-7cm cutter.Lime deep patty pans with the pastry rounds.Refrigerate for 10 mins.Pre heat oven to 200C.Cover each pastry shell with baking paper and fill with rice or beans .Bake for 10mins .Discard the paper and rice,then bake for further 5 -7mins .Cool completely before filling with cheese .
For cheese filling:
Using electric beater,beat together cream cheese ,icing sugar,grated lemon rind and juice.Pipe or spoon the mixture into cooled pastry cases.
For kiwi filling:
Puree the kiwi fruit. In a heat proof pan, add in puried kiwi,icing sugar, and colouring .Some kiwi fruits are sweet while some sourish.Adjust the icing sugar as to required amount.
Simmer gently and thicken the sauce with corn flour mixture.Leave to cool.Place a tsp or enough sauce to cover the cream cheese filling on the tart.Decorate as per your liking and serve.You can dust with icing sugar if preferred.
You can also use cut kiwis instead of preparing the kiwi filling.Just glaze the fruits with some jam.
