Happy Birthday/ Savoury Bread Pudding

Two years has passed and am proudly celebrating my blog's 2nd birthday. Am very grateful to all my blog visitors and friends .Time sure flies when you're having fun! And I am, most definitely. I have open a new sub blog to celebrate the happy day.Its about places where I go to eat around Melaka.Of course Melaka boosts many fantastic places and is known for its tasty cuisines.Thats why you can see a huge amount of people flowing thru the roads during school holidays and many are from Singapore .I would not be covering all the places in Melaka but to those places which i like the food. I also feel if you dont have anything good to say about something then its better left unsaid!! Today am sharing a savoury dish with all of you which is Savoury Bread Pudding.








Ingredients A

250gm chicken pieces
20gm carrot (julienne )
½ tsp fennel
½ tsp cumin seeds
1 lemon grass
½ in galangal
¼ tsp salt
3 tbsp sugar
½ tsp turmeric powder

Ingredients B
9 slices of bread
1 tbsp butter
½ tbsp sugar
165ml fresh milk
3 eggs (Gred B)
50 gm flour
½ tsp salt

Ingredients C

90gm mozzarella cheese
1 red chillies (deseed and chopped)
3 tbsp chopped spring onions






There are three stages ,
1. To prepare the chicken filling
2. To prepare the egg mixture
3. To assemble





For the chicken filling:

Pound or grind together until fine fennel, cumin seeds,lemon grass and galangal. Cut chicken pieces into small pieces and combine the grind ingredients into it. With it mix in turmeric powder, sugar and salt.Marinate the chicken for 30mins.
In a wok, heat up 3 tbsp , add in the chicken mixture and saute well.In between add in grated carrots and stir further. Saute until the dish is dry. Leave to cool.

For the egg batter:

Beat eggs lightly. Add in milk alternately with flour. Stir until the flour is well mixed with the milkegg mixture. You can also sieve a few times by hand method to mix the flour nicely or use a blendar to have a fine mixture. Melt 1 tbsp butter and add it into the mixture .Add in salt too. Give a stir and leave aside.Discard the sides of the breads.Cut into cubes or you can make it into smaller parts with your hand.

To assemble :
Use a loaf tin, grease it before placing an aluminium foil on it covering all sides. Grease again the foil with butter. This is important so that the pudding doesnt stick to the foil once baked.
Place ½ portion of the bread cubes into the pan spreading it at all area. Top it with the chicken. Spread evenly. Sprinkle with half of the red chillies and chopped spring onions.Then cover it again with the rest of the bread.Slowly pour in the egg batter until it covers the bread.Top with cheese ,spreading it evenly, garnish with teh balance spring onions and red chillies.
Preheat oven at 170C and bake for 30-35mins.Leave to cool before cutting and serving with chilli sauce.






Tips: You can add cheddar cheese about 20gm if desired before adding in egg batter.

Weight of Grade A Egg : 75gm
Weight of Grade B Egg: 55gm
Weight of Grade C Egg: 45gm
Adjust the amount of eggs used if using Grade A or Grade C eggs.
