Soya Sauce Cili Padi Prawns



600g prawns, trimmed and washed, slit back to open
3 cups of oil to deep fry
100g cornflour (to coat)
Some chopped spring onions,to garnish

Ingredients to be pounded
10 pips garlic
20 bird eye’s chillies or cili padi
2cm roasted shrimp paste
1 tsp sugar
½ tsp salt
2 tbsp soya sauce
1 tsp sesame oil
¼ tsp pepper powder





Mix prawns with pounded ingredients and marinate for 15mins.Place the prawns separately from the liquid in a plate.Coat prawns with cornflour at all parts of the prawn.Shake off excess.
Heat up oil until hot, deep fry the prawns until golden brown.Dish and drain.Deep fry the prawns a few at a time.

Mix 1 tsp corn flour to the marinated liquid. In a wok add in the sauce and thicken it slightly.Adjust the taste with seasoning. Serve as dipping sauce for the prawns.
