Sharing a truffle recipe with all of you.

Chocolate Herbal Tea Truffles


Chocolate Truffles are irresistibly rich, smooth, creamy, and full of flavor. Each bite-sized truffle is made with rich butter, heavy cream, real fruit, and the finest gourmet chocolate available in the market.



Traditionally truffles are made with chocolate ganache center coated in chocolate or cocoa powder, usually in a spherical, conical or curved shape. Other fillings may replace the ganache: cream, melted chocolate, caramel, nuts, almonds, berries or other assorted sweet fruits, nougat, fudge or toffee, mint, chocolate chips, marshmallow and popularly liquor.

Ingredients:



2/3 cup heavy cream or thick cream
2 tbsp unsalted butter,leave to soften
2 tsp loose herbal tea (used a combination of rose,lavender,lemon grass,rosemary,jasmine etc, see picture below)
6 oz bittersweet chocolate (I used swiss bittersweet chocolate)
1 tsp icing sugar
1 cup unsweetened Dutch process cocoa powder

Bring cream and butter to a boil in a small heavy saucepan and stir in tea leaves.Remove from heat and let steep 5mins.
Meanwhile.finely grind or chop the chocolate and transfer to a bowl.Pour cream through a fine mesh sieve onto chocolate ,pressing on and discarding tea leaves,add in icing sugar ,then whisk until smooth.Chill ganache,until firm for about 3 to 4 hours.



Spoon level teaspoon of ganache on to a baking sheet.Put cocoa in a bowl and mix in about 11/2 tsp icing sugar to it.This will give a less bitter taste to the truffles.Roll each pieces of ganache into a ball(wash your hands and dust your hands with cocoa powder to avoid stickiness) Drop a ball at a time into the bowl of cocoa and coat .Transfer to an airtight container or small paper casing and keep chill at all times.



Note:You can also chill the ganache overnight and coat it the next day . The bitter sweet chocolate that I used is about 100gm per bar , so you need at least 11/2 bar .
