Melting Moments

Just as the name suggest, it melts in ones mouth and is rather heavenly.I have used lemon cream , but you can vary it with orange or strawberry flavouring.The secret to having a tasty melting moment is using unsalted butter.




250g unsalted butter
½ cup icing sugar
11/2 cup plain flour
½ cup cornflour

Lemon Cream
60g unsalted butter
½ cup icing sugar
1 tsp grated lemon rind
3 tsp lemon juice

Method:
Cream butter and sugar until light and fluffy.Add sifted flours ,mix well.Put mixture
Into piping bag fited with flutted tube.Pipe rosettes on to lightly greased pan with grease paper trays.Pre heat oven 180C and bake for about 10 to 12 mins until pale golden.Cool before sandwiching cookies with lemon cream.

Lemon Cream: Beat butter until smootyh,gradually add sifted icing sugar,beat until mixture is light and creamy.Beat in lemon juice and rind.

All-purpose or plain flour is a blended wheat flour with a gluten content lower than bread flour, ranging between 9% and 12%. Depending on brand or the region where it is purchased it may be composed of all hard or soft wheats or a blend of the two, and can range from low gluten content to moderately high.
