Chocolate Cupcakes

Cupcakes,cupcakes and more cupcakes.They are small and cute ,and bite sized too.This good all fashioned butter or chocolate cake in a paper cup are transformed into multi coloured works of art nowadays.Beside the standard chocolate or vanilla base with swirl frosting ,it comes with rainbow sprinkles,heart shapes and flowers,teddy bears with delicate swirls and many more.

Just about everybody knows somebody who makes cupcakes these days.Actually I have come across many blogs that uses cupcakes as their theme in blogging.No wonder it is so famous that people are choosing to have cupcakes at birthday parties and weddings.

This recipe of cupcake is adapted from Jean Francois Arnaud ,a MOF pastry masterchef based in France and a sugarwork arist.You can check out his site here.As for the topping it is something of my own creation.The cupcakes were bouncy ,soft to the touch and I will not hesitate to make it again and again.




Chocolate cake mix:
100g dark chocolate
100g butter,softened
3 eggs
150g sugar
75g flour,sifted

Chocolate cream
100g dark chocolate
5 tbsp unsalted butter
1 tbsp milk
2 tbsp icing sugar

Method:
Melt chocolate and butter in a double boiler .In a mixing bowl with ballon whisk attachment,beat the eggs and sugar together on medium speed until the ribbon stage.Add the melted chocolate and butter ,mix well.Using a spatula ,fold in the sifted flour.Place paper cups into baking moulds.Pour ¾ full and bake for 13mins at 160C.Remove from oven ,set aside to cool completely before decorating with chocolate cream.

Cream: Beat butter and sugar until fluffy.Add in milk and melted chocolate and combine until smooth. Decorate using a piping bag on the cup cakes.You can make design with melted chocolate and freeze them in the fridge overnight.The designs then can be taken out slowly with a sharp knife and be decorated on the chocolate cream.
