Lemon Cookies


180gm unsalted butter
150gm caster sugar
1 large egg yolk
1 tsp salt
2 tsp vanilla essence
Grated zest of 1 lemon
3 tsp lemon juice
230gm all purpose flour

For decorations:

Chocolate chips, colored sugar beads etc


Place butter in a bowl of an electric mixer and beat on medium until smooth.Add in sugar and beat until smooth and silky.Beat in egg yolk,then the salt,vanilla ,lemon zest and the juice.Reduce the speed to low and add the flour,beating until just incorporated. Turn the dough on to a work surface. The dough would be soft to the hand. Wrap in a plastic wrap and refrigerate for 30 mins.

Grease the baking pan slightly and place a baking sheet .This is to enable the paper to stick to the pan. Using a piping bag with star nozzle, pipe the dough in desired design. I have made into S shape and decorated with strawberry chocolate chips.

Preheat oven to 170C and bake for 15mins.Leave the cookies to cool in the pan itself for about 5 mins before slowly transferring to an airtight container.
