Spicy Asparagus With Prawns

Asparagus is low in calories and provides substantial amounts of two antioxidants—vitamin A and C. It truly shines as a source of folate and has a goodly amount of fiber.

The flavor of asparagus marries well with many ingredients and it is equally delicious dressed simply with olive oil, lemon juice, salt and pepper. Raw asparagus is also tasty served as crudités with a flavorful dipping sauce. When using asparagus as a salad, always wait until serving time to add the dressing as the high acid content of most dressings will turn the spears yellow. Add fresh chives, savory, thyme, and tarragon to enhance the flavor of cooked asparagus.

In Malaysia, beside combining it with chilli or done in a variety of sambal style by indians and malays,the chinese combines it well in soy sauce,oyster sauce and makes a delicious mix vegetable dish.

Today I have a sambal style dish .Try it out.



Ingredients


400g asparagus,cut into 4cm lengths
200g prawns - remove shell but keep tail, slit back
5 tbsp oil

Grounded ingredients:

10 shallots
5 pips garlic
6 red chillies
3 tbsp dried prawns,soaked
11/2 cm toasted shrimp paste(belacan) (optional)

Method

1. Heat oil in wok,saute ground spices until fragrant
2. Add prawns and fry until the colour changes to pink
3. Add asparagus,mix well,sprinkle 2-3 tbsp water onto mixture and cover wok.
4. Cook for 1 min.
5. Add salt and sugar,mix well and taste
6. Serve hot with rice



Note : Can substitute asparagus with french beans,sweet potato leaves or eggplant.

    Spicy asparagus with prawns seems to be very interesting recipes.I haven't tried any recipes with asparagus till now....i heard only about stirfry....this seems to be new too..Thanks for sharing..
