Nyonya Fried Chicken

This is a favourite chicken dish of the family.Hope you like it you!!

1 chicken (cut into 16 or more pieces)
3 tbsp thick soya sauce
1 pc of maggi chicken cube or 1/2 tbsp chicken granules
(u can use other branded chicken cube also)
2 tbsp corn flour
3/4 tsp salt(according to individual taste)
3 tsp sugar

To grind into a paste and marinate:
2 lemon grass(sliced)
10 shallots
5 sprig of curry leaves(use the leaves only)
1 tbsp chilli powder
11/2 tbsp chicken curry powder
11/2 in ginger
5 -6 garlic
1 tsp turmeric powder


Grind the above ingredients into fine paste including the powders.
Mix with the chicken pieces,adding the soya sauce, chicken granules(if using chicken cube,crumble it first ) ,salt and sugar.
Marinate the chicken for 4 hours.
Before deep frying the chicken, add in the cornflour into the chicken and mix to get a crunchy chicken piece.
Serve hot with rice.

Note :
Use paper towel to drain excess oil after frying.
Be careful when you are adding the salt as there are soya sauce and chicken cube/granules being added in this dish.
Since am deep frying the chicken I prefer to cut it in small pieces ,so that it will be well done in all parts ,but you can cut it to desired pieces.
