Purple cabbage and Fennel slaw


·       I cup sliced fennel bulb
·         ½ an apple ,julienne
·         100gms purple cabbage
·         1 medium onion

·         Dressing
·         ½ tsp parsley flakes
·         1 tsp yellow mustard
·         1 tsp honey
·         1/4 tsp salt
·         1/4 tsp cracked black pepper
·         1-1/2TBS fresh lemon/lime juice
·         1 tsp sugar cane sugar
·         ¼ cup mayonnaise




Directions:
Julienne all the vegetables and fruit.Sliced the onions as thin as possible as well.Mix in a bowl.To the ingredient add in the dressing.
Dressing: In a small bowl, mix in all the ingredients except mayonnaise.Give a stir and mix into the veges and fruit.Stir to combine.Finally add in the mayonnaise and mix until the ingredients are well combined.Keep refrigerated and serve cold.Goes well as a side dish or eat it just as it is as a diet food!!
Note: You can also substitute mayonnaise with ½ cup apple cider vinegar.
