Cauliflower Kottu





This is slightly a different version of kottu, compare to the kerala ones. Do try, its simple.






200gm cauliflower (break into florets)
1 medium size potato (dice)
1/2 tsp turmeric powder
salt to taste
1 tsp corn flour mix 2 tbsp water

1/2 a bombay onion, thinly sliced
1/2 tsp chopped ginger
half a green chili, thinly sliced


Tempering
1/4 tsp mustard seeds
1/4 tsp cumin seeds (optional)
1 sprig curry leaves


Heat 1 tbsp oil, add mustard seeds, once splutter, mix in cumin seeds and curry leaves. Once aromatic, throw in onion and saute until soften, add in ginger and green chili. After a minute, add in potatoes and add 1 cup water. Leave to simmer gentle for the potatoes to cook. In between, mix in turmeric powder and salt. Once potatoes has soften, add in cauliflower. It takes about 5mins only to cook. Add more water if needed. Close lid so that it cooks fast. Thicken the gravy with some corn starch mixture. Give a few stir and close fire. Serve as a side dish.
