Tauhu/Taukwa Sambal









2 fried tauhu (cut into cubes)
5 shallots
2 tbsp tomato sauce
1 tbsp chilli sauce
1 tbsp tamarind juice
2 tsp sugar
salt to taste


Pound to a paste
5 red dried chilies (soaked in hot water for 20mins and drained)
2 nips garlic
1in shrimp paste

Garnish
Chopped spring onions
thinly sliced green chilies



Cut the fried tauhu 5x5 and you will get 25 cubes for each. Shallow fry the fried tauhu  partially and dish out. In the same oil, add in pounded ingredients and saute until fragrant. Then add in tomato sauce and chilli sauce. Give a few stirs, then pour in tamarind juice. Stir add sugar and salt to taste. Finally add in whole shallots if small , if big halve it and throw it in with the fried tauhu. Stir until all the ingredients are well coated. Keep stirring until the sauce thickens and becomes dry. Dish out and garnish.
