I love prawns , and any dish prepared with it , is usually a hit with my taste bud ;-)
Sometimes when I am in a rush, this cereal curry prawns would be a dish that I prepare as a side dish. It goes well as an accompaniment with rice ,with me anytime ! Easy to prepare and served immediately with some chilli sauce,its finger licking good!!There are so many variations that one can prepare when prawns are dipped in batter. You can add spices or herbs to suit your taste bud .Sharing one simple version with all of you . Maybe you can try it out for the coming Chinese New Year or holiday .

Ingredients
400gms Peeled large White Prawns ,tail intact
2 Large Eggs, Lightly Beaten

A small handful of Fresh Curry Leaves , deep-fried

1 ½ Cup All Purpose Flour
3 ½ Tbsp Curry Powder(chicken curry powder or fish curry powder)
½ to 1 tsp Chili Powder
1 1/2 tsp Salt
1 ½ Cup All Purpose Flour
3 ½ Tbsp Curry Powder(chicken curry powder or fish curry powder)
½ to 1 tsp Chili Powder
1 1/2 tsp Salt
Ingredients C
½ cup Breadcrumbs (panko would be the best choice)
2 cups cereal/You can use any instant cereal mix or desiccated coconut
Method
Normally for Ingredients B ,I do not have an exact measurement, just mix in the amount according to my preference, if you want it less spicy,lesson the curry powder .
Clean the prawns, drain and pat dry.
In a large bowl, add the flour, curry powder, chilli powder and salt. Mix until well combined.
In another bowl, mix breadcrumbs and cereal.
To fry the prawns: Toss the shrimps into the flour and shake off the excess flour. Then dip the shrimp in the beaten egg and then into the cereal mixture, making sure to cover the entire prawns.
Fry the prawns in batches on medium heat until golden brown in colour. To serve, top the prawns with some fried crispy curry leaves and if preferred chilli sauce (as dipping sauce), my preference being Lingam Chilli Sauce!!
