Christmas Sweet Treats


Its Christmas , and Malaysian Delicacies would like to wish all who celebrates it, Merry Christmas.
MD is sharing two sweet treats, due to lack of time and responsibilities in other matters, couldn't prepare more !
The brownies that I'm sharing today was a hit, I actually wanted to do a swirl brownies with marshmallow(A recipe from Amazing Recipe which I had made with a slight variance) , but it didnt appear doublecolouring as expected, but yet the brownies had a pudding texture, and was a hit at home. We all loved it, and the topping of melted chocolate was a welcome. The second recipe is Apple Fritters, there is many combination of flours that can be used in preparing the fritters, but I find this to my liking. It is my own recipe, and I hope all of you like it.

Marshmallow Chocolate Pudding Brownies




Ingredients

4 oz chocolate chips
1 1/2 sticks (3/4 cup) unsalted butter
1 cup sugar
3 eggs
1 tsp vanilla
1/4 tsp salt
1 cup flour
To melt
1 cup marshmallow
½  cup white chocolate buttons
1 tsp butter
1 tsp water

Topping
2 cups dark chocolate buttons(melted)
some melted white chocolate ,to drizzle

Directions
1.    Heat oven to 350F
2.    Grease a 8"X8" pan and set aside
3.    In a large pot over medium heat, combine chocolate and butter and melt to combine, whisking frequently to ensure chocolate does not burn or separate from butter (alternatively, you can use a double boiler).
4.    Once the chocolate is completely melted, remove from heat and stir in sugar. Add eggs one at a time, whisking to blend after each addition. Add vanilla, flour and salt. Stir until just combined.
     Pour the batter into a greased baking pan .
5.  Melt marshmallow, white chocolate ,butter  with a bit of water until marshmallow and chocolate had melted in a double boiler.(Note: It will take some time for the marshmallow to melt .) Pour the melted marshmallow into the chocolate batter . Swirl slightly until both batter combines.
6.    Bake for 30-35 minutes, or until a knife inserted in the center comes out with a few crumbs.
7. For topping: Melt the chocolate and pour on the cake. Drizzle with some melted white chocolate. Leave to set in the fridge . 


Apple Fritters

Use standard measurement cup
1 cup plain flour
1/3 cup cornflour
1 tbsp rice flour
1 tsp baking powder
1 tbsp sugar
1 tsp vanilla essence
270ml ice water or soda water
3 large green apples (core and slice in thin wedges)
(slice one by one as per needed so they don't discolour)
Topping:
Icing sugar
Method
Add all the dry ingredients in a bowl, slowly pour in ice water and stir , add in vanilla essence
and stir further. Sieve to ensure smooth batter. Cut an apple in thin wedges , coat it into the batter.
Heat about 1 1/2 cup of oil .In medium heat, place about 3 to 4 wedges only at a time and fry until crisp.
Serve with some icing sugar .
