250gms brown button mushroom
1 tsp fennel seeds,coarsely pounded
5 pods cardamom
1 bay leaf
3 medium onions-chopped
3 large tomatoes(blanched in hot water and peel of the skin,chopped and keep aside)
2 tsp ginger paste
2 tsp garlic paste
1 tbsp sugar
1 tbsp sugar
1 tbsp vinegar
½ tsp freshly grounded black pepper
½ tsp turmeric powder
1 tsp nutmeg powder
½ tsp green cardamom powder
Salt to taste
Clean the mushrooms, twist the stem so that it comes out easily.Discard the stem.Do the same with all the mushrooms.Keep aside.
Heat oil,sauté fennel,cardamom pods,bay leaf until aromatic.Add the onions and sauté until fragrant.Add in all the rest of the ingredients except mushroom.Cook in low fire until oil separates.Meanwhile cut the mushrooms into 6 parts.
Once the oil has separated from the masala,stir in the mushrooms ,cover and cook.Stir occasionally .Cook until the mushroom have soften.You can taste a small piece to ensure that the mushroom had reached the desired texture.Serve as a side dish.
