More diwali dishes for all to try :
Chicken In dark Sauce/Ayam Masak Hitam
Spices
2 cinnamon sticks
5 cardamom
1 bay leaf
1 star anise
Ingredients:
90 ml / 3 fl oz / 3/8 cup Vegetable Oil
1 kg / 2 Pounds chicken/mutton
3 pieces Tamarind Juice (Assam Juice) - mix Tamarind Pulp with hot water, strain
45 g / 1 ½ oz / ¼ cup Brown Sugar or Palm Sugar (Gula Melaka)
1 litre / 1 3/5 pints / 4 cups water
125 ml / 4 fl oz / ½ cup Dark Sweet Soy Sauce (Kicap Manis)
3 Tbsp / 2 ½ fl oz Chili Paste (Cili Boh) (if using mutton use chilli powder)

Paste Ingredients: - to be Finely Grounded
8 Shallots (Red Onion), peeled
4 Garlic Cloves, peeled
2 cm / 1 inch Ginger, peeled & chopped
4 Lemongrass (Serai), finely sliced
1 tsp Turmeric Powder
Water to blend
Method:
Heat the oil and add the spices,once aromatic sauté the Paste until fragrant and oil begins to appear on the surface.
Add in chicken, Tamarind Juice, Dark Sweet Soy Sauce, Brown Sugar/palm sugar and water. Stir well. Add salt and pepper to taste.
Simmer until the chicken is tender, and the sauce almost dry. Serve.
Gulab Jamun Ice Cream
For the Gulab Jamun
Buy instant gulab jamun mix and prepare as per the direction given in the box.
For this recipe: make a small marble size round .The gulab will rise slightly when fried and double in size once soaked in sugar syrup. So the smaller it is, the cuter it will look.For the sugar syrup I added a few drops of cardamom essence.
For the ice cream:
2 tbsp roasted pistachio nuts(chopped)
2 tsp cardamom essence(sold in Indian grocery shops)
(if not ground 5 cardamom pods into very fine powder)
200gm vanilla ice cream
Method: Mix all the ingredients together and freeze it.
Decoration:
Chopped pistachio nuts
Rose petals(any colours)
Serving:
Place 1 big scoop of ice cream in serving cup,place a gulab jamun in the centre,drizzle some of the sugar syrup if desired, and sprinkle some pistachio nuts as well as some rose petals.Serve immediately.
