Bubur pulut hitam or black glutinous rice porridge is one of the many sweet desserts that you will find in Malaysia.One of the most popular and common desserts in many Nyonya and Peranakan families.It is made of black glutinous rice (black sticky rice), water, sugar, and topped with slightly coconut milk when served.
Malaysian Delicacies would like to wish all muslim friend and bloggers "Selamat Menyambut Ramadhan Al-Mubarak " or "Happy Fasting".Hope you try out this easy sweet dish as a starter to open your fast.
100gms black glutinous rice (wash and soak for about 30mins)
2 screwpine leaves(knotted)
3 cups water
½ chopped gula Melaka/palm sugar
4 tbsp sugar(optional)
A pinch of salt
½ cup thick coconut milk
Boil the rice with water, palm sugar and sugar.(Can lessen the sugar amount if you do not want the porriage too sweet).Add in the knotted screwpine leaves and salt as well.Stir and leave to cook until the rice is soft.Add water if the dish dries off.Once the rice is cook, check whether the consistency of liquid is enough.If too thick add more water .Close fire.You can serve it hot or cold ,I prefer it hot.
Serving:Pour hot semi thick porridge in a serving bowl or cup, pour on top 1 to 2 tbsp of thick coconut milk .Serve immediately.
Note: You can add the coconut milk in the porridge and give a stir.But do not allow it to boil.Close fire.Some do not like to take coconut milk,therefore ,serving the coconut milk and porridge separately gives your guests a choice of adding it or not.
