8 sheets filo pastry
60g butter, melted
2 tbsp oil
1 cup fresh breadcrumbs
3 tbsp ground almonds
2 large green apples
80gm raisins
1 tbsp lemon juice
½ tsp ground cinnamon
½ tsp mixed spice
Icing sugar ,to dust
Preheat oven at 180C.Lightly grease a baking tray with melted butter.Place a parchment paper.
In a bowl,mix together the breadcrumbs and almonds.Keep aside.
Mix melted butter with oil.Keep aside.
Peel,core and thinly slice the apples.Place in a large bowl and add in the sugar,raisins, lemon juice,cinnamon and mixed spice. Toss well with clean hands to thoroughly coat the apples.
Brush a sheet of pastry with the melted butter and oil.Form a large rectangle by placing a second sheet halfway down the first.Sprinkle the breadcrumbs/almond on over the pastry.Layer another two sheets on top, brushing with melted butter.Sprinkle again with breadcrumbs/almonds.Continue layering with the remaining filo pastries.
Drain the fruit filling and then spread along one long edge of the pastry.Roll up the pastry like swiss roll.Roll up the pastry,tucking in the ends to enclose the filling.Place seam side down and brush on top with melted butter.Bake for 35-40mins or until golden brown.Cut diagonally into individual slices , dust with icing sugar and cream when serving.
