Cherry Almond Cake

This cake is something that I wanted to try out for quiet some time.Mainly because it’s a cake prepared with ghee. Oh yeah.I have never eaten cake baked with ghee..The cake has almond and cherries and seem a cake for the right occasion: Christmas.
So, for those who want to bake a cake for Christmas, why not try this soft textured recipe.Actually you cant get the taste of the ghee that much on the cake.This recipe comes from Chef Devagi Shanmugam.




200gm ghee,diced
160g castor sugar
3 large eggs
1 tsp vanilla essence
50g ground almonds
320g self raising flour
150ml milk
150-200gm glazed cherries,halve
30g almond flakes

Grease a loaf tin and line with non stick paper.Preheat oven to 180C.

Combine all the ingredients except cherries and almond flakes in a mixing bowl.Usin g a beater,beat at medium speed until ingredients well combined.Stir in halve cherries and pour on the baking pan.Sprinkle with almond flakes.Bake for 40 to 50mins or until cake is done.Dust with icing sugar if desired.

Note: The cake tastes better once left overnight.Felt the cake tastes better without cherries actually.So its up to you whether you want to add in cherries or not.
