Homemade Vegetarian Mee Mamak/Noodles

(serves 2)

This recipe was inspired mainly coz I wanted to participate in the 15 Minutes Cooking Event hosted by http://spicesetc.blogspot.com/. (winks).For Malaysians, 15mins cooking means stir fry ,may it be bee hoon/rice vermicelli, noodles, kuey teow or even rice. Or it can be also a variety of soups.When it comes to 15mins dish, for me it would normally be to prepare using ingredients which I have on hand. May it be in the fridge or in my store room cabinet!!







Lets check out the recipe, the ingredients can vary according to personal taste.

250gm yellow noodles
1 large garlic(chopped)
1 onion(slice thinly)
1 small tomato (discard the middle potion of the tomato and cut in small cubes)
1 handful of bean sprout
½ a stalk of mustard green(cut into a few parts)
2 firm fried tofu (cut into desired potion)
1 large potato (peel of the skin, cut into cubes, microwave for 1 min)
2 tsp chilli paste
1 green chilli(slice into a few parts)
Salt and sugar to taste

Sauces
2 tbsp chilli sauce
1 tbsp tomato sauce
3-4 tbsp dark soy sauce
2 tbsp light soy sauce

Garnishing
Some julienne cucumber
Calamansi Limes (halve)/Limau kasturi


Method:
Heat up a wok, add in 1cup of oil. Deep fry the potatoes until cooked. If using unfried tofu ,then fry the tofu until lightly browned. Dish out. Leave 2 tbsp oil on the wok and discard the rest of the oil. Saute chopped garlic until lightly fragrant ,add in onions and if using fried tofu, at this stage you can add it also. Stir fry for a few seconds, add in chilli paste and saute further. Once the chilli paste has cooked, add in the noodles. Stir fry the noodles until it is well incorporated with the rest of the ingredients. Add in the sauces ,salt and sugar to taste. Stir fry further.Finally add in tomato,bean sprout and mustard green.Stir fry until the vegetables has soften. Do not add water for this dish .If you have washed the noodles, leave it in a colander for at least 1 hour .Water in noodles will not give you the correct dryness to the dish. Serve with julienne cucumber and calamansi limes. Before eating, squeeze the lime juice on the noodle and njoy
