Special Thai Prawn Curry

Prawns are highly popular seafood.They are regarded by many people as a real gastronomic treat.They usually make colourful dishes which are full of flavour and are particularly impressive on special occasions and at dinner parties.



This special prawn dish comes from Thailand , The gravy should be slightly watery but I have thicken it to suit my taste. The intense smell of limau purut add much flavour to the dish as well with all the other combination of spices.




500g prawns,trimmed,washed and drained
2 stalks lemon grass,crushed
2 calamansi leaves/daun limau purut
150ml thick coconut milk
1 large bombay onion,cut in wedges
2 tomatoes, chopped up
1 ½ -2tbsp lime juice

Ground spices

10 dried chillies –soften in water
5 red chillies
3 bird's eye chilies
6 shallots
6 small garlic
1 pc coriander root
2 slices galangal
11/2cm toasted shrimp paste

Seasoning

Salt to taste
Sugar to taste
1/4tsp black pepper
1 tsp ikan bilis powder/anchovies stock cube

Garnishing
Chopped coriander leaves and chilli curls

Direction:
Heat oil ,saute ground spices until fragrant.Add in lemon grass, tomatoes, and calamansi leaves and saute further.Add in coconut milk and lime juice .Bring to a boil.Simmer gently the gravy.In between add in the seasoning and prawns.Cook for further 4 mins .Finally add in bombay onions and cook for another 2 mins.Dish ontp serving plate and garnish the dish .Serve hot with rice. If you feel the gravy is too thick add in some water or thin coconut milk and leave to simmer for a while then dish out.
