Sweet Sour Chilli Chicken

Perhaps one of the greatest afflictions of modern day living is that nearly everybody eats on the run ,which often means rushing to cook after work or a day out doing house task.I suppose its not the cooking that becomes an ordeal but what to cook !!
Having had such incidents once too many times, I have actually learned to expect them. Which is why, the solitary can of fruit cocktail, ready packed chicken fingers, frankfurthers , ice cream, cans of sardine in tomato sauce, tomato puree and canned tomatoes , the many types of bottle sauces are always available at home.
During tiring days, it is nice to know you can make simple fast prepared food and turn them into elaborate servings of finger foods and still dazzle ur family with tasty food.
So ,for today am blogging a very simple recipe Sweet Sour Chilli Chicken which will land fast on the table and also disappear fast as well!!

Ingredient A
1 nip garlic (chopped)
1 large Bombay onions(halve and cut into 3 parts )
3 dried chillies( cut into a 4 parts)

Ingredient B
For the sauce:
1 tbsp tomato sauce
2 tbsp Lingam Chilli Sauce (any other choice also acceptable)
1 tbsp Lingam Thai Chilli Sauce (any other choice also acceptable)
1 tsp oyster sauce
1 tsp sweet plum sauce
A few drops of sesame oil
2 tsp sugar
1 tsp cornflour

Ingredient C
4 chicken fingers (The brand I use is shown below)
1 stalk spring onions(cut into a few segments)

Combine Ingredient B in a bowl and leave aside.
Heat 2 tbsp oil, add in the dried red chilies first, after a few seconds, add in chopped garlic and sauté until aromatic. Add in onions . After sautéing a few seconds add in the sauces (Ingredient B). Leave a few minutes to thicken the sauce .The sauce must be just enough to coat the chicken fingers and not have gravy in it so that we have the chicken crisp. Close fire.

Deep fry chicken fingers .Cut into 3 or 4 parts .
Add into the sauce the chicken fingers as well as the spring onions .Combine the chicken well with the sauce until well coated. Serve immediately
