This recipe would be something to bake for the coming Raya Festival.For this month I will only submit 2 cookie recipes since am busy with my kidz final term examination which will drag up to the end of this month.This week it’s a chocolate nutty cookie recipe .I will blog another delicious cookie recipe next week, and if possible a special lemonade recipe for all.
The main idea of this cookie came from Bill
Granger. But I have to admit that the cookie have varied from measurements and ingredients.(LOL).As I was watching his show, he keep dumping the ingredients with cup measurement.It becomes a problem to us when the cup measurement is actually not the same as we have!! Ok,lets drop that ,we can use a cup, and measure using the same cup for butter,sugar and flour. But the problem arise when it was not said how much of butter was needed.He cut of less then half a butter and drop it beautifully into his mixing bowl and the cookie did look good .Instead of using chocolate chips, he used a bar of chocolate and just broke it into chunks .Another ingredient was the chunky peanut butter which I did not have, instead I made do with what I had in hand which was Peanut Butter and Strawberry Flavoured Stripes(Grin) !! I added some nuts so its cruncy.Now I have the recipe slightly changed in measurement , but don’t worry ,it was delicious.
You can wrap up the cookies in a box and give it as a gift to your friends whenever you go visiting .The combination of chocolate and peanut butter plus nuts really can enhance anyone’s appetite.
Ingredients
150gm flour
1 tsp baking powder
200gms/2 cups brown sugar
2 tbsp peanut butter
120gm unsalted butter(slightly cool and cut into cubes)
1 egg
1 tsp vanilla essence
1 bar chocolate(buy the one which is thinner in width so that its easier to break it up)
1 cup chopped roasted nuts (peanuts,cashewnuts and pistachios )
I bought the Cadbury Gold chocolate because it was thinner and easier for me to break in chunks.
Method
Beat sugar and butter until fluffy. Add in egg and vanilla essence.Beat for a few minutes.Then fold in peanut butter ,nuts and flour.Break the chocolate into chunks and drop it into the batter.Mix until all the ingredients are well incorparated.Refrigerate the cookie batter for about 45mins to 1 hour.
Use a grease paper to your baking pan. Preheat oven 180C .Take a bit of batter roughly to a size of a marble,but slightly bigger.Shape it rounded like a marble.Place it on the pan.Leave some space for the cookie to expand.Do the same with the rest of the dough.In this way you can get an even shape to all your cookies.
Bake the cookies for 15 mins. Immediately take out the baked cookies from the oven.Transfer the grease paper with cookies to a rested surface.Dont leave it on the hot baking pan because the cookies will bake further and the colouring will be too dark. Leave the cookies to rest for about 20mins on the greased paper.It will come out easily from the paper after 20mins.Bake and do the same until all the cookie dough finishes.
